One of my favorite desserts to eat beside a slice of pineapple upside down cake, is a powder sugar beignet. Lorddddddd (my voice stretching out the d), I can literally get my whole entire life with some Cafe Du Monde & a hot chocolate! I absolutely Love New Orleans, from the food, the culture, the people, just everything. I am creole rooted therefore I get the whole Beignet & Cajun life. There’s no Cafe Du Monde in California (I wish they would franchise the place) therefore, I have to create my own, and let me tell you mine are so good! 1 1/2 cups warm water
1/2 granulated sugar
1 packet of dry yeast
1 1/4 teaspoon salt
2 teaspoons of vanilla
1 teaspoon of almond flavor
1 cup evaporated milk (aka condensed milk in a can)
7 cups of flour
Non stick spray
Oil (to fry the beignets)
3 cups of confections sugar (aka powdered sugar lol)
NOW LETS GET TO WORK!
In a bowl, mix water, sugar, and yeast and let that sit for 10 minutes.
In a separate bowl combine salt, beaten eggs, and condensed milk. Mix this mixture together with your yeast mixture. Now, take 3 cups out of your 7 cups of the flour and apply it to the yeast mixture and stir it up! Next add the shortening and continue to stir while adding the rest of your flour. Add your vanilla, and almond flavor.Mix that in well.

Ok, now on a lightly floured surface (usually on a lightly floured cutting board, my preference) remove your precious dough from the bowl and place it onto the floured surface and knead until smooth. It’s totally o.k. if your dough feels a little sticky! Remember were not chefs, were just trying to cook up the stuff that we like!
Moving along, using another bowl, spray the inside of it with your non stick spray. Put your dough into the bowl and cover it with plastic wrap, or foil and let it rise in a warm place for 2 hours. Understand that the warm place can just be the counter. Just don’t refrigerate. Your dough is suppose to double in size.
Time to preheat your cooking oil! I didn’t measure this for you because every one like to fry things differently. However, I like to use enough oil like I’m deep frying chicken. Keep your fire on MEDIUM not high because these things cook a little fast and you don’t want to burn them.
To finalize it all, roll the dough out to about 1/4 inch thickness and cut into 1 inch squares. Let’s place your doughy squares into the cooking oil that’s preheated and ready to fry. Deep fry constantly until they become a golden color. Flip those beignets back and fourth turning them over making sure that they are cooked all the way through. Once they are fried put them on a plate with some paper towel to drain the extra oil!
Lastly, put your confections sugar in a bag ( gallon zip lock bag preferred) & put your perfectly golden beignets in it and shake it up until its all covered.
Then Serve with coffee, hot chocolate, or hot tea!
