I know everyone is on the healthy tip right now. No fried foods, no oil, no cornmeal blah blah blah, but thats just not me. Do I like eating healthy? Yes………….just not all the time. 80% of the time I like to get down with my southern food! My fried lobster is a nice switch up if you just want to something different and its literally one of the easiest things to make!
2-3 cups of cornmeal
1/2 cup of flour
Your own seasoning to taste whatever that seasoning is ( a little garlic powder, garlic salt, seasoned pepper, and a dash of cayenne pepper is what I use but everyone doesn’t like garlic)
4-5 fresh lobster tails
oil to fry them
Now time to fry up some lobster y’all!!!
Preheat your oil on medium so that by the time that you’re done with the below instructions your oil will be nice and ready.
First and foremost you need to rinse your lobster tails under cold water and rub them clean.
Next, using KITCHEN SCISSORS, cut down the back of the lobster (the back not the side of the legs). If you’re using kitchen scissors then the cutting down the middle is a breeze. Next rinse again under cold water to clean throughly.
Now take the meat and push it up on the lobsters back so that the lobster meat is still attached to the lobster but is sitting on the back of the tail.
In a gallon sized ziplock bag (my favorite thing to use for shaking food up to fry) add your cornmeal, flour and seasonings.
Add two lobsters at a time per shake, to ensure all parts of the lobster meat is throughly covered with your seasonings.
Your oil should be ready by now, using cooking tongs, place one lobster in the oil at a time and let them cook. They are usually done when lobster has turned bright orange and the meat is fried golden & fluffy white. Once your lobster is fried always put them on several dry paper towels covering a plate to extract the extra oil!
